Ensaymada

Do you ever have days when you just crave bread?  Soft, warm, and chewy bread?

Well, I sure do.  I love bread and a whole lot of it!

To satisfy this terrible craving, I made a quick little dessert that is very similar to a Filipino pastry called Ensaymada.  It's a buttery sweet bread topped with a little sugar and some cheddar cheese.  YUM!

Typically Ensaymada takes hours and hours to make from scratch.  My mother only attempted to make this one time, and was resolved to just buy them from local Filipino bakers afterwards.

I stumbled upon this simple recipe while visiting with a Filipino family several years ago.  Although these aren't made from scratch, they certainly taste like the real deal.  They're typically served as an afternoon snack with coffee or tea.  Enjoy!
